The sliding door from the cockpit to the cabin isn’t level. Is there a trick to adjusting the guide rollers to level the sliding door?

Ours isn't exactly level either but is closes fully and keeps out rain. How so you know it is not level? Put a bubble level on the top of door? Suggest you get a can of Super Lube spray and spray all the rollers on bottom of door and top rails . Make sure you blow/vacuum out the tracks first.

The door slides fine, we’ve cleaned and lubed so all is good there. The door isn’t square to the fiberglass opening and to get latch to lock, I have to pull the door closed till the starboard side lifts up and the door and opening are aligned. I figured there must be some roller adjustments like on a house patio door

How does the sill track look at the jamb?.....can you shim and caulk? My thoughts
