An update.
I recently made two trips from here in the lower Florida Keys to the Dry Tortugas. The last fuel docks in the Florida Keys are in Key West. From Key West to the Dry Tortugas is just under 70 miles, so we're looking at 140 miles roundtrip just to get there and back. There are no supplies in the Dry Tortugas, so you have to bring all the fuel, food and water you are going to need.
Fully loaded meant unique opportunities to test performance. I found that fully loaded in picture perfect flat calm seas I was able to tweak adjustments and get 2.2 to 2.3 MPG, but that figure dropped immediately to around 1.9 once I hit even the most modest breeze and/or chop. Only the return legs, with much of my outgoing weight now removed, I could sustain a cruising MPG of around 2.4 in ideal conditions and about 2.0 when confronted with a light wind or chop.
I'm still preferring the performance with the 17" pitch 3 blade over that of any other prop I tried (stock 16" pitch Yamaha 3 blade, 15" pitch 4 blade and the current 17" pitch 3 blade).

The experimenting is about to go one step further. A 17" pitch Solas 4 blade is going to get a try in about 2 weeks. Stay tuned for performance numbers.

I think from my experience with my smaller boat going from a 3 blade to a 4 blade, you should see better grunt and getting up on plane perhaps faster or smoother. Top end will be hurt a little though from my experience. This was on a 22 foot bow rider with a 260 HP Merc with an Alpha drive.
That 22 was used for a lot of wakeboarding and tubing and such. The move for me was to get both of my older boys, who at this time were older teenagers and big guys out of the water quicker on wakeboards. Sometimes with a full boat of about 4 to 5 people pulling them out of the water was near impossible with the 3 blade prop. Was a breeze with the 4 blade.

I think the sharrow prop, which is available and only overpriced, not absolutely obnoxiously overpriced like it is for inboards, is the only thing that will give you a dramatic change in MPG. Adding blades to a prop increases surface area and drag, they almost always improve hole shot at the cost of top end and mpg. There are some exceptions but I think that’s usually in specialty drives. Great to hear the higher pitch is producing good results for you. The all chain rode would put a couple hundred pounds in the bow and might help you maintain plane at a lower speed. A little tab might also, worth a try.

There's only so much torque you're going to get out of a V6 outboard, so I deliberately passed on the all chain rode and the "power tower". The goal was to keep the dry weight down as much as possible. I knew 90% of my trips were going to be 3 day/2 night to 5 day/4 night romps out on the hook. Indeed, just about every trip starts with my 26 XO loaded to the gils with food, water, drinks, towels, gear, etc. My thinking is that running a few hundred pounds lighter than the typical 26 XO has allowed me to run with a 3 blade 17" pitch prop and get better mileage than folks are getting with the stock 3 blade 16" pitch I'm curious to see how the 17" pitch 4 blade performs, but I have this gut feeling that I'll probably wind up having to drop 1" of pitch from it. We'll soon see.
